Well it has been a while…. baby girl arrived early! We are doing well and so happy to have her here, safe and sound. Perhaps it was the browning bananas sitting on my counter or just mark it up to a pregnancy craving, but I couldn’t get the idea of a banana bread with cream cheese out of my head. I ended up trying Martha Stewart’s banana cupcake recipe and used my new go-to cream cheese frosting from the carrot cupcakes we made at Easter. Instead of purchasing store bought cards, I always try to make something for special occasions – and I have to admit our holiday crafts usually involve some sort of handprint/footprint art!  It’s meaningful to the recipient, fun for us and (usually) easy clean up! Carrot Cupcakes

I was asked to bring cupcakes to Easter Dinner with my husband’s family. In addition to kid-pleasing orange creamsicle cupcakes topped with jelly beans, I made these yummy carrot cupcakes, with handmade fondant carrots and homemade cream cheese icing for the grownups.   And guess what?  They were simple!
