Easy Salmon BLTs – A Fresh Twist on a Classic Sandwich

Looking for a quick, satisfying lunch or dinner idea? These Salmon BLTs are one of my absolute favorite meals. They’re easy to throw together, full of flavor, and endlessly customizable.

Lately, I’ve been loving them on Panera’s Tomato Basil Bread, but they’re also delicious on rye, sourdough, potato bread, or whatever you have on hand. Swap the bread and you’ve got a new sandwich each time!

And the flavor variations? So fun. Some days I stir a little garlic or sriracha into the mayo, other times I switch up the salmon seasoning. My personal favorite is Harry & David’s Hamburger Spice Rub (sounds odd, but trust me!). Luke prefers Old Bay, and when I’m in a pinch, salt and pepper works just fine.

You’ll notice in the photo I diced our yellow tomatoes—just one of those habits picked up from serving little ones.

We usually serve these with Alexia’s Crispy Seasoned Potato Puffs, or, if I have a few extra minutes, I’ll make zucchini fries or roasted asparagus for a lighter side.

Salmon BLT Recipe

The recipe below makes 2 sandwiches. Scale up as needed!

Ingredients

  • 2 boneless, skinless salmon fillets

  • Seasoning of choice: Harry & David’s Hamburger Rub, Old Bay, or just salt + pepper

  • 4 slices of your favorite bread, toasted

  • 2–4 slices of cooked bacon

  • Mayo (plain or flavored with garlic, sriracha, or lemon)

  • 1 small tomato, sliced or diced

  • Greens: arugula, lettuce, or field greens


Instructions

  1. Pat salmon fillets dry and season both sides generously.

  2. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the salmon and cook about 4 minutes per side, or until it flakes easily.

  3. Spread mayo on two slices of the toasted bread.

  4. Top one slice with a salmon fillet, greens, tomato, and bacon.

  5. Cap with the second slice of toast and repeat for the second sandwich.

  6. Serve warm with your favorite side!

  • Try it with avocado for a creamy twist.

  • Swap mayo for Greek yogurt to lighten it up.

  • Use leftover salmon to make this a near-instant meal.

  • Make it a wrap for an easy picnic lunch.

Ingredients

  • 2 boneless skinless salmon fillets (adjust according to the size of your fillets)
  • Seasoning such as Harry & David’s Hamburger Spice Rub, Old Bay or Salt and Pepper
  • 4 slices of your favorite bread toasted
  • 2-4 slices of cooked bacon depending on how much bacon you want to load them up with!
  • Mayo
  • 1 small tomato sliced or diced
  • Your choice of greens arugula, field greens, lettuce, etc

Instructions

  • Pat salmon fillets dry and season with a sprinkle on both sides of Harry & David seasoning (or just use salt and pepper).
  • Heat a nonstick skillet over medium-high heat and 1 TBPS of olive oil. Once hot, add the salmon and cook about 4 minutes per side or until cooked through.
  • Spread mayo on two pieces of toast. Add the cooked salmon fillet to 1 bread slice, top with some greens, tomato and the crispy bacon and finish with another piece of toast. Repeat with remaining ingredients.
