Salmon BLT’s

These Salmon BLT’s are one of my favorite meals. They are easy to make and you can change them up in so many ways. Right now I’m loving them on Panera Bread’s Tomato Basil bread, but Rye Bread, Potato Bread, Sourdough… all yummy!  Sometimes I make a garlic mayo, other times I’ve added a little sriracha for Luke and I.  You can also change up the way you season your salmon. It sounds a little wonky, but my favorite seasoning for these is Harry & David’s Hamburger Spice Rub.  Luke’s favorite is Old Bay! Both are great, but you can also just use salt and pepper if you like. In the photo you can see my yellow tomatoes are diced, this is just a habit I’ve gotten into with the kiddos 😀 Typically I’ll serve them with Alexia’s Crispy Seasoned Potato Puffs or if I have time zucchini or asparagus Fries.

Salmon BLT's

The recipe below makes 2 sandwiches, but adjust the ingredients to make as many as you need!

Ingredients

  • 2 boneless, skinless salmon fillets (adjust according to the size of your fillets)
  • Seasoning, such as Harry & David's Hamburger Spice Rub, Old Bay or Salt and Pepper
  • 4 slices of your favorite bread, toasted
  • 2-4 slices of cooked bacon, depending on how much bacon you want to load them up with!
  • Mayo
  • 1 small tomato, sliced or diced
  • Your choice of greens, arugula, field greens, lettuce, etc

Instructions

  1. Pat salmon fillets dry and season with a sprinkle on both sides of Harry & David seasoning (or just use salt and pepper).
  2. Heat a nonstick skillet over medium-high heat and 1 TBPS of olive oil. Once hot, add the salmon and cook about 4 minutes per side or until cooked through.
  3. Spread mayo on two pieces of toast. Add the cooked salmon fillet to 1 bread slice, top with some greens, tomato and the crispy bacon and finish with another piece of toast. Repeat with remaining ingredients.
