I love blackberries…. growing up we had a slew of them in the field behind our farm and I have so many memories of all the summer nights we’d trek back there, fill up our baskets and Mom would make us blackberry “mush” and always my favorite, blackberry cobbler. This is an old fashioned blackberry cobbler with a simple, sweet, buttermilk biscuit-like topping.
This would be really delicious with some vanilla ice cream or whipped cream… right now though we are in the middle of the Coronavirus epidemic and we are staying home unless it’s absolutely necessary to go out. So we are making due with what we have, and I am ever so thankful for the blackberries we picked and froze this past summer.
Rinse blackberries under cold water and toss with 1/2 cup sugar. Let stand 15-20 minutes. Preheat oven to 375 degrees. In a mixing bowl, whisk together flour, 2 tablespoons sugar, salt and baking powder. To flour mixture, stir in melted butter and buttermilk just until the dry ingredients are moistened. Add blackberries to 8x8 casserole dish. Spoon tablespoon fulls of batter evenly over top. Bake 40 minutes or until topping rises and is golden brown.Simple Blackberry Cobbler
