Salmon BLT's
The recipe below makes 2 sandwiches, but adjust the ingredients to make as many as you need!

- 2 boneless skinless salmon fillets (adjust according to the size of your fillets)
- Seasoning such as Harry & David's Hamburger Spice Rub, Old Bay or Salt and Pepper
- 4 slices of your favorite bread toasted
- 2-4 slices of cooked bacon depending on how much bacon you want to load them up with!
- Mayo
- 1 small tomato sliced or diced
- Your choice of greens arugula, field greens, lettuce, etc
Pat salmon fillets dry and season with a sprinkle on both sides of Harry & David seasoning (or just use salt and pepper).
Heat a nonstick skillet over medium-high heat and 1 TBPS of olive oil. Once hot, add the salmon and cook about 4 minutes per side or until cooked through.
Spread mayo on two pieces of toast. Add the cooked salmon fillet to 1 bread slice, top with some greens, tomato and the crispy bacon and finish with another piece of toast. Repeat with remaining ingredients.
