Ingredients

  • 2 cups fresh or frozen blackberries
  • 1/2 cup sugar

For topping

  • 1 cup all purpose flour
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 2/3 cup buttermilk
  • 3 tablespoons melted butter

Instructions

  • Rinse blackberries under cold water and toss with 1/2 cup sugar. Let stand 15-20 minutes.
  • Preheat oven to 375 degrees.
  • In a mixing bowl, whisk together flour, 2 tablespoons sugar, salt and baking powder.
  • To flour mixture, stir in melted butter and buttermilk just until the dry ingredients are moistened.
  • Add blackberries to 8x8 casserole dish. Spoon tablespoon fulls of batter evenly over top.
  • Bake 40 minutes or until topping rises and is golden brown.
