Marshmelon Ice Cream: A Summer Treat Inspired by a Whimsical Writing Adventure

Every now and then, a recipe comes to life with a story that’s just too sweet not to share.

This one began not in the kitchen… but on paper. My daughter was working through a Journaling in July challenge from DressUpYourWriting.com, and instead of simply checking off prompts on her bingo board, she took things to the next level: using every single one in one wildly creative story.

The result? A hilariously adorable tale featuring Luna, a watermelon-obsessed caterpillar, and her best friend Claude the crab, who happens to have an unshakable love for marshmallows.

One of the prompts was “Invent your own ice cream flavor,” and that’s how Marshmelon Ice Cream was born!


When Writing Turns into Dessert

I’m all for encouraging creativity, especially when it spills over into the kitchen. So when she suggested we try making Marshmelon Ice Cream for real, how could I say no?

We pulled out our trusty Ninja Creami and set to work.

The base is a classic, creamy vanilla. It’s made with the standard Creami combo of cream cheese, milk, sugar, and a splash of heavy cream. Once it was frozen solid and spun to silky perfection, we folded in icy-cold chunks of watermelon and a generous handful of all-natural freeze-dried mini vanilla marshmallows… and naturally, we had to add some sprinkles too.

The result? Summer joy in a bowl. It’s light, fruity, sweet without being over-the-top, and full of fun texture. And the best part? Watching my daughter’s face light up as her story literally came to life in our kitchen.

Marshmelon Ice Cream Recipe

Makes: 1 pint
Prep Time: 10 minutes
Freeze Time: 24 hours
Spin Time: ~5 minutes

Ingredients:

  • 1 tbsp cream cheese (softened)
  • 3 tbsp sugar (or sweetener of choice)
  • ¾ cup whole milk
  • ¼ cup heavy cream
  • ½ cup cold watermelon chunks (seedless)
  • 2 tbsp freeze-dried mini vanilla marshmallows (we used an all-natural brand)

Instructions:

  1. Make the base:
    In a small mixing bowl, whisk the cream cheese until smooth. Add sugar, milk, and heavy cream, whisking until fully combined.
  2. Freeze:
    Pour the base into your Ninja Creami pint container and freeze on a level surface for 24 hours.
  3. Spin:
    Once frozen solid, remove from freezer and spin on “Ice Cream” setting.
  4. Add the mix-ins:
    Create a well in the center, then add your watermelon chunks and freeze-dried marshmallows. Use the “Mix-In” setting to blend them in.
  5. Scoop and serve:
    Top with extra marshmallows if desired and enjoy immediately!

As a homeschool family, I’m always looking for ways to help my kids see how writing connects to the real world. Marshmelon Ice cream reminded me just how magical that can be.

It started with a silly story…
And ended with a homemade ice cream flavor we’ll never forget.

Equipment

  • Ninja Creami Deluxe

Ingredients

  • .5 oz cream cheese
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3/4 cup heavy cream
  • 1 cup whole milk
  • 1/2 cup cold watermelon chunks
  • 2 tablespoons mini dehydrated marshmallows

Instructions

  • In a large, microwave-safe bowl, microwave the cream cheese for 10 seconds. Add the sugar and vanilla extract and with a whisk or rubber spatula, combine until the mixture looks like frosting, about 60 seconds.
  • Slowly mix in the heavy cream and milk until fully combined and sugar is dissolved.
  • Pour base into an empty CREAMi® Breeze™ Pint. Place storage lid on pint and freeze for 24 hours.
  • Remove pint from freezer and remove storage lid from pint. Please refer to the quick start guide for assembly and unit interaction information.
  • Select ICE CREAM.
  • With a spoon, create a 1 1/2-inch wide hole that reaches the bottom of the pint. Add chocolate chips to the hole in the pint and process again using the MIX-IN program.
  • When processing is complete, remove ice cream from pint and serve immediately.
